Optimizing a website which uses JavaScript and jQuery

Just a quick question (or 2)
If I have divs which are hidden on my page, but are displayed when

a user clicks on a p tag and the hidden div is displayed using jquery
-
a user clicks on an a tag and the hidden div is displayed using jquery with the href being cancelled
in both examples, will the hidden content be optimized, or will the fact it is initially hidden make it harder to optimize?

Google will see the content as plain text, check for example seobrowser.com.
However, there is a chance that Google is parsing the CSS to find out that this particular content is hidden, and therefore devalues it. I don't recall ever reading about this, but it would make some sense because many visitors won't see the text.

Use of iFrames to embed video content?
So we decided to add interesting video content we have shot ourselves to improve the user experience on our website. We have read though all the SEO material and advice we could find and decided to use Vimeo to host our videos instead of self-hosting. The videos themselves will not show up on Vimeo or Google as we set our account to 'private', but we notice that to embed the videos on our website - the embed code is an iFrame. My question's are, aren't iFrames supposed to be bad for SEO? Should we look to another video hosting solution instead? If other websites embed our videos on their site using the iFrame, do we get any SEO credit or the backlink? Thx.

Google using descriptions from other websites instead of site's own meta description
In the last month or so, Google has started displaying a description under links to my home page in its search results that doesn't actually come from my site. I have a meta description tag in place and for a very limited set of keywords, that description is displayed, but for the majority of results, it's displaying a description that appears on Alexa.com and a handful of other sites that seem to have copied Alexa's listing, e.g. similarsites.com. The problem is, the description from these other sites isn't particularly descriptive and mentions a service that we no longer provide. So my questions are: Why is Google doing this? Surely that's broken behaviour. How do I fix it?

Use of Location Folders
I'd like to understand the pro's and con's of using a location subfolder as an SEO strategy (example: http://sqmedia.us/Dallas/content-marketing.html), where the /Dallas folder is holding all of my keyword rich page titles. The strategy is to get local-SEO benefits from the use of the folder titled /Dallas (a folder which is unnecessary in the over all structure of this site), but how much is this strategy taking away from the page-title keyword effectiveness?

Hosting in the US for an Australian website
Hi, I was wondering whether it's still important for SEO to host a website in the same country as you're targetting. We host a fair few Australian sites and we're looking for a new webhost at the moment. Should we only consider hosting on Australian servers or is it worth looking at servers elsewhere? One of the main reasons we're thinking about US hosting is that we can get a machine that is 3x more powerful than we can get in Australia for the price. This performance increase should go some way to minimizing the effect of the latency increase. Thanks, Nick
