Google Search Console and User-declared canonical is actually Hreflang tag

Hey,
We recently launched a US version of UK based ecommerce website on the us.example.com subdomain. Both websites are on Shopify so canonical tags are handled automatically and we have implemented Hreflang tags across both websites.
Suddenly our rankings in the UK have dropped and after looking in search console for the UK site ive found that a lot of pages are now no longer indexed in Google because the User-declared canonical is the Hreflang tag for the US URL.
Below is an example
https://www.example.com/products/pac-man-arcade-cabinet - is the product page
- is the canonical tag
rel="alternate" href="https://www.example.com/products/pac-man-arcade-cabinet" hreflang="en-gb" /> - UK hreflang tag
rel="alternate" href="https://us.example.com/products/pac-man-arcade-cabinet" hreflang="en-us" /> - US Hreflang tag
then in Google search console the user-defined canonical is https://us.example.com/products/pac-man-arcade-cabinet but it should be https://www.example.com/products/pac-man-arcade-cabinet
The UK website has been assigned to target the United Kingdom in Search Console and the US website has been assigned to target the United States. We also do not have access to robots.txt file unfortunately.
Any help or insight would be greatly appreciated.

So you have claimed www.domain.com and targeted it to the UK. And you have claimed us.domain.com and targeted it to the US in Search Console?
And for the two URLs below are these tags all on each page exactly as I have them below?

Where are you searching from? What are you searching? And is there anything different between those two pages other than targeting? Do you redirect users based on IP?

Optimization expert suggesting we add Canonical tag to every page on site
Hi guys, We're currently launching a new page, and we have an optimization and technical SEO expert (highly rated on Upwork, very intelligent, has solved complicated issues in the past and improved our Core Web Vitals greatly) suggesting we put canonical tags on every page of site, pointing to itself (other than the case of where canonicals should point to other page, we have those listed separately. Do you guys see a benefit to this? Could it harm us? He says large retailers do this, couldn't quite glean the benefit from it though. Current site ranks well and isn't set up like this. Google ignoring the Title Tag?
Anybody seen this too? We have a webpage with tiny different title tag and H1. If you search for let's say "Renovatie", you get to see the title tag "De kostprijs van je renovatie". However, when you search with the search term "Wat kost een renovatie", we see the H1 title in the SERP, which is "Wat kost een renovatie". So that's normal when you search a term that's exact the same as the H1 tag, Google ignores the title tag? N.

Canonical Issue?
Hi, I was using the On Page Report Card Tool here on SEOMOZ for the following page: http://www.priceline.com/eventi-a-kimpton-hotel-new-york-city-new-york-ny-1614979-hd.hotel-reviews-hotel-guides and it claims there is a canonical issue or improper use of it. Does Google monitor which links are actually followed?
If a link to my site is posted on another site and many people start following that link and they stay on my site for a while, and I also have GA set up, does Google factor that information back into the Google rankings? In other words, are there ways that Google tries to use clicks and bounce rates and other user behavior to determine page rank and domain rank? Best,

How is a dash or "-" handled by Google search?
I am targeting the keyword AK-47 and it the variants in search (AK47, AK-47, AK 47) . How should I handle on page SEO? Right now I have AK47 and AK-47 incorporated. So my questions is really do I need to account for the space or is Google handling a dash as a space? At a quick glance of the top 10 it seems the dash is handled as a space, but I just wanted to get a conformation from people much smarter then I at seomoz. Thanks, Jason

How to handle .mobi and normal website for mobile search and regular search
Hi, we have our regular website at jameda.de and a mobile only page at jameda.mobi Users on mobile devices will be automatically redirected to .mobi if they click on a link to jameda.de in the SERPs. What is the best practice to ensure, that Googlebot is indexing jameda.de and Googlebot Mobile is indexing jameda.mobi without duplicate content issues and having Link-Juice benefits on mobile search at the same time?
