Long-tail with few searches vs. Generic with many

Our business is a contract packager/manufacturer of products sold to very prominent brands who sell through retail. For example, we make the sunscreen under a brand’s name, which you might then find on the shelf in Target or CVS. As I’ve optimized our pages, I’ve attempted to go long-tail, which has been simply to add “…contract packaging” or a variation after the particular product. So, instead of trying to compete in “sunscreen”, which would pit me against big-box distributors and prominent brands and sellers of sunscreen, I’ve optimized for “sunscreen manufacturers.”
“Sunscreen” has 31K – 72K searches, with an 81 Difficulty and 67 Potential. “Sunscreen manufacturers” has a low 13 Difficulty and a decent 54 Potential, but only 51 – 100 searches. Some of my terms have only 0 – 10 searches, but I’ve been thinking that it’s better to compete for fewer but more qualified / buyer-intent searches and have generally lower Difficulty.
Can you please tell me if this is a smart strategy, or if I should instead try to compete in higher-volume terms but much greater Difficulty? Thanks a lot for everyone's help.

Sorry I didn't say Thanks sooner! Yes, that's probably the best idea for now. I'll give that a try, and it's pretty easy with my long tail being essentially the KW + a modifier. Thanks, Jordan.

Is there anyway you could try to do both and see which one yields greater results? That might be a better approach instead of limiting yourself.

So I'm super new at SEO and learning a lot. I'm a small business owner and enjoy doing it myself. Are long URL's good or bad? Wordpress Title Element tag too long?
So apparently when I add the name of the blog within Wordpress, the name of the blog shows up after the the main title of each blog post and page. So trying to keep the title element >70 characters, how does one name the Wordpress blog as mine is/was: Lake Tahoe wedding photographer / Heidi Huber Photography and keep that only on the intro page and leave each page of the blog and the titles of the blog posts to not have "Lake Tahoe wedding photographer added to the end of the Title Element? Anyone have any idea? I also had gone in at one point and updated every single Title on each page/post using Yoast's SEO and the SEOMOZ crawl is still coming up with over 216 caution errors for the title page. Does Google Bias Against Homepages for Search Queries that are a Question?
If you are trying to rank for a keyword phrase that is a question (e.g. how to ___) does it matter if your page is the home page of your site or an article on your site? I suspect that Google would treat question search queries differently and would show preference for articles over a home page in most cases. An article would be more likely to satisfy the searcher by providing the answer to their question, whereas the home page usually doesn't provide specific answers. I looked at one keyword phrase that is a question and only 1 of the first 20 results was a home page. Any thoughts or experience with this?

Too many links on home page
SEOmoz crawl states I have 3 pages with too many links. My sites are hosted on Yahoo small business. One page they state is too long is the home page/ind. with 600 links to each page on the web site ( I think). Is this really a problem and how do I fix it? The other two pages are product categories that link to the products under the main product type. What I do not understand is that we have many larger product categories that SEOmoz crawl is not stating too many.

Correct use of Canonical link vs 301 redirect
Hi All, Seeking yet more advice. SEOMOZ tools have told me I have duplicate content on one of my sites and I am keen to clean this up. I am not to familiar with the following so thought I would ask. The duplicate content is shown on : www.mysite.com www.mysite.com/index.html Obviously I only see index.html when I check the code so what is the best method of resolving the duplicate content, Canonical or 301? Many pages describing services or just a few?
Hello, I'm in a professional services industry. My services, and my competitors' services, can be broken down into about 20 categories or so. Most of my competitors have 50–100 pages describing their services, pages all cross-linked with appropriate anchor texts, but pages that have a lot of duplicate (though rewritten) content. That is, each individual page is pretty shallow, but they create the structural appearance of a lot of relevant content. Should I do the same, or should I just stick to the 20 categories with a handful of cross-links as necessary? This will allow me to get more relevant keywords on the page, and will likely be easier for the user, but might make Googlebot think the site isn't as deep, and it might affect my ability to do as many internal anchor text links.
