Permalink structure and categories on Joomla

Hey all,
I'm handling a website for a youth telecom brand. We're migrating our website from droople to joomla with a completely new design. The entire revamp has been outsourced and I'm responsible for overseeing it.
As it stands, our URL structure is something like www.xyz.com/category/item
I want to change to category/child-category format: www.xyz.com/category/child-vategory/item
In terms of SEO, how would this change impact results, pros and cons?

When trying to sculpt an internal link structure, is there any point in placing text links to top level pages that are already in the main menu?
Does Google recognise a link in the content if there is already a link in the menu? My understanding is that Google only counts the first link it finds.

Best website IA/structure for SEO?
What's the current thinking on the best structure of information on a website for SEO? Structure for visitors can be best achieved through navigation menus, but I am more interested in how I should organise my URL structure so Google can make sense of the depth of my site topics. The website is an Asian travel blog so there are essentially two specific types of post on the site. One type is location specific (may be about an attraction, a city, a region or a country). The other type is general (usually about an aspect of travel like travel cash, visas, scams, etc). At the moment, all my general posts are organised like www.asiantraveltips.com/blog/[post-name]. My location-specific posts are organised like www.asiantraveltips.com/[country]/[region-or-city]/[place-name]/ so that Google can see I have depth of topics about each country and region. But I find it hard to keep consistency in this arrangement of URLs and I don't know if I might be better off to just have everything flat and tagged as a blog post like www.asiantraveltips.com/blog/[country]-[region-city]-[post-name]/? What's best practice these days? How are others organising travel blog websites?

Question Regarding Site Structure
I have a quick question regarding site structure that I hope some of you guys could share your opinion on. I watched a white board friday from Rand a little while back where he explains that you need to try and make the site structure as flat as possible. He was saying try having no more that 3 links from the home page to get to the desired location. My question is this. I am looking at a site that has a pretty complex structure that I am trying to clear up as much as possible without making any of there rankings suffer. So they have www.domian.com/general-category/district/town/ and sometimes www.domian.com/general-category/district/town/item-specifics Now i know it is not good as it is, but they are dubious about changing too much as they have some serious traffic coming to the site. But, my question is that all the pages can be found from the home page through the menus/sub-menus. But do these count as a direct link from the home page. Also a problem is that because of this mozbot has detected that there are too many links from the home page and suggested that it should be below 200. But should I make these menu links no index or no follow. Obviously, by doing this, if the link does count as direct from the home page it wont after doing this. Thanks Jenson

Advice with keywords - category - Forum
Hiya guys Everyone has been really good to me on here, just wanted a bit of advice with the keywords on my forum. my website is a nightlife forum for the UK, each city has its own section. Each section has a eg: _What's on in Birmingham? Club Nights, Upcoming Events, Promotions _ as the Title category, Should I drop the Club Nights, Upcoming Events, Promotions and put that in the description of the forum. So it'll just be What's on in Birmingham? with a description Find Club night information, Upcoming events and pr............. eg Just wondering if it was to stop searches been made, like, Club nights in Birmingham etc. from being targeted.
