The SEO company you employ "should" also be responsible for researching new key word opportunities within your industry (no just you helping them), and "should" assess the kind of traffic you "may" achieve as your project progresses. Assess competition is crucial, or you could be wasting your time.
Different pages on your site can be specifically targeted for certain industry "key words" and "geographical locations."; some competitive and some may not so.
All this depends on the strategy your guys employ..
For example, go create a page on your site specifically for individual case studies. What did you do? Where was it? What was the outcome? How does this benefit new customers? All these questions can help achieve great content for your customers, which is great for SEO.

I'm a firm believer that businesses should invest money in developing interesting/educational content as part of their marketing strategy. If it is good enough, applied and shared correctly, it will create the foundations for success.
I'm just against paying for directory links that "could" cause harm a website, and may "never" become searched.

Linking Root Domains are the number of "unique" domains linking to your domain or page; for example sony.com linking back to your website. Maybe you wrote for them and it was published on their site (with a link feed back to your site).
Multiple back-links from a "single" domain will be grouped and counted as a one linking "root domain". If you are doing something good or have a fantastic product, and you are telling the world online, and the world says WOW, you'll "naturally" develop links.

In relation to "links", you can recover and fairly quickly as William pointed out.
Every website needs continued maintenance. Disavow provides you the opportunity to keep you site in shape! We run monthly health checks (using Moz) for our clients which includes refreshing link data, keeping disavow files updated etc. This gives us the opportunity to identify and solve any site issues efficiently with the client firmly in the loop so to speak.
What has happened? Why it happen? Where? What we will do? Evidence/Outcome?
Whoever you employ, make sure they cover everything and provide "evidence". You deserve to have this. It's not just links that can get you penalised however. If you are researching what exactly Google will penalise you for, take a read below.

Something else to consider...
If you considering building a site, I would certainly "first" get to work on designing a "site map" to help you clarify your site's purpose and goals. This is essential for both SEO and usability.

You may already know this Gordon, but I wanted to point this out because so many new businesses build a site which does not cover their "customer needs". A site map will give you a clear picture to expand your content for your targeted audience, as well as the SEO benefits.
Most directories are not worth being listed on and certainly not worth the money in my opinion! Who uses directories anymore? Maybe some folk's still do, but like Eduardo says, make sure it's a "no-follow." Surely your money could be better spent elsewhere?
"Do paid directory links violate Google guidelines?" I'm going to have to say, yes! And I'm saying yes to "no-follow" links to - why? Purely on the basis that your practically throwing money away!
Any links intended to manipulate page rank or a site's ranking in Google search results may be considered part of a link scheme and a violation of Google’s guidelines.

Whoever you choose to run with, be sure that they...
1. Have a complete "health check" identifying if you been hit by any algorithms. Once the company has this report, they can get to work on removing any poor quality links, duplicates etc. If this is not carried out, any good work you do in terms of future digital marketing is probably going to be a waste of time
2. On-page SEO - Make sure your webpages are optimised. From looking at your site I can see it's a little starved off content, and also i see so much opportunity for new content.
3. On-page SEO - this will also allow you to develop a blog, generating "read worthy" info.
4. Getting registered for Google, Bing LOCAL BUSINESS SEARCH!
This would be a good start for you. PPC is good although I can see some "call to action" elements to add. Remember organic SEO development should be the core of your online marketing efforts, not PPC. I believe PPC should compliment you marketing efforts should you have the budget to do so.

How does Google sniff out a piece of photography which has been purchased from a stock website, to the same image taken from Google images and used for advertising? Same picture sourced ethically and unethically. At the moment I'm unable to give my client a straight answer.

The images come from reputable sources like shutter stock, or corbis. Some images we've purchased on behalf of our client have been seen elsewhere, so my brain tells me it's duplicated material?
I know Google's policy it to have everything ethically, no cutting corners, but surely this is standard practice?
Does Google penalise duplicated terms and conditions. I know solicitors use the same legal terms and phrases all the time...

Yes. We had a call form a client last week with the same question. Our response - each local business search is completely dependant on the users location settings. While we know this is completely true, it never filters results which are closest to you. Shouldn't this be how it's supposed to work? Maybe not!
One of our clients is a hardwood flooring company next to Tower Bridge in London. If am in the city and search for "Hardwood Flooring in London", they do not always appear. However, travel another 20miles out of town, and they'll pop as a local business. Just has me a little confused sometimes.
Any suggestions where to find good copywriters, for digital marketing who will write expert content and promote? We looking to expand and thought someone here maybe able to help?

Yes, social media signals are a vital search marketing component. If you've written some great informative content, the best way to share is via social media, which may or may not draw your followers, and more to your site.
Remember most marketing tools will not give you a full (100% accuracy) overview how well your site is performing.

If a client is based in New York, and looks to target customers is New York. Is it wise to have your hosting server located in another country? Will this affect being searched locally? I have heard this can affect local search optimisation?

A solid link profile which contains variety, within your industry niche, can sometimes be beneficial. Directory submissions is pretty much dead. However my question was to ask "if" there are any creditable directories anymore. Although we think not, if never hurts to ask the question.
I agree most directories are no good and will incur penalties.
My question is if anyone could recommend any credible directories which maybe we've not come across. Their are many advertising companies who provide good exposure such as scoot, the independent, thompson local…we only use a handful.

A highly debated topic. Domains with many key words, plus location key word stuffing have seen many sites penalised. Much comes down to the keywords used within a domain to see if you have been penalised or not by Google. You would really need to look assess all algorithms to eliminate any doubt.
All specialists will tell you it's best to build a Brand site on a keyword domain so you get both brand mentions and generic intent keywords.
Moz is just one very good tool to use to assess the health of a website. A good marketing company will use various tools to check out any problems. Never stick to one. My advice - have an expert assess everything before coming to with a strategy to improve you website performance.

Key word stuffing is a big no no well documented by Google. It would be a wise decision to first shorten the link and to make sure the link is relevant to your page (just be natural). If you are registered on google places, your registered address will get picked up in the Tampa area.

We have a client who is experiencing much in the way off duplicated content and broken, spammed inbound links. While we are removing and correcting everything using google webmaster, I'm hearing stories of websites not being able to recover from algorithms/penalties applied because of this.
My client had around 250 inbound links to their website and over the space of 3 weeks mounted over 8,000 unethical links.
Any information surrounding this issue would be much apprecited.

Agreed - stick to directory sites that are relevant to your business. Always check out your competitor links (www.opensiteexplorer.org) as a method of searching for good authoritative links. Remember on 10% of you link build strategy should be focussed on link development.

If you employ a company with a good reputation, they'll make sure the building blocks for your company link strategy is authoritative, as well as informative for the targeted audience.
Google algorithms will penalise poor links for sure.
In the last 3 years, Social Media has had a massive impact on link development. Social Media is the future for "authentic" link development.

You may have some luck using Ubersuggest or Quicksprouts. This can really help you to identify "new" words/phrases associated with your dominate focus key word groups. Great for developing tail end key words.
