How do I determine international search volume for a search term, beyond google?

I am trying to determine which countries I should be entering into next with my product based on search volume and competition. The issue is that not every country has google as their primary engine, ie. China.
How would I go about figuring out volume / competition globally across all engines?

Exact match keyword phrases, are they still really important to search engines?
This has been bugging me for a while now and I'd like to know what you guys think. I often find what I can only described as 'oddities' in our rankings for certain search terms. For example, we might rank top 5 for 'A5 week view diary' and then second page for 'Week view diaries A5'. (Not an actual example, I just find stuff like this all the time across our various pages) They are basically the same query, so I don't understand why so often there is such a discrepancy. I can only put this down to exact match keyword phrase still being an important ranking factor. What do you guys think? Are exact match phrases still an important part of the SERP results? Thank you. KWs w/ no bids on Google AdWords
When using the Google Keyword Planner to research KWs, is it a correct assumption that if the KW doesn't have a suggested bid, there's probably not going to be a real impact in optimizing for it? Hypothetically, if I saw a high-volume, low-competition KW w/out a suggested bid I'd feel differently, but I'm just seeing it happen with low volume and competition. Thanks,

Where can I find data on growth in individual keyword search terms, over tiime?
I am operating in an emerging market, and want to understand the underlying growth in the relevant Google keyword search terms. I can use this as a proxy for market growth. I have checked out Google Trends, but this confusingly shows peak search volumes (out of 100) not search volumes. Are there any better tools out there? Any advice would be greatly appreciated.

Is Google mistakenly identified names in the website?
When i search "Song for a stormy night nhaccuatui" (nhaccuatui is nhaccuatui.com) URL: https://www.google.com.vn/search?q=Song+for+a+stormy+night+nhaccuatui&pws=0&hl=en Google result bold Zing - Google may have trouble doing that?
