Keyword Stuffing?

I'm the copy writer for a marketing firm, who is doing the SEO work for a website that sells wholesale Disney apparel.
I was recently asked to rewrite their homepage blurb, as it was all over the place. However, one thing I'm wondering is if you guys felt the various Disney keyword combinations (IE: Disney Beach Towels, Disney Mugs, Disney Travel Mugs, etc) were necessary for SEO purposes? Or, if they would be considered keyword stuffing? I thought they seemed pretty spammy, but I just wanted to run it by you guys and get your thoughts. Both versions are below. Thanks!
Current:

I just looked at your site and you don't have a H1 tag on the home page. Let me advise you to setup a Bing Webmaster account for your site and review the SEO report. It will caution you on H1, title, meta, duplicate pages and more.

From a purely UX stand point, you revised is much easier to read. Don't worry about how often the keyword phrase shows up on the page (except on the UX side). Follow the directions of the On-page Report Cards here on SEOmoz to help guide you the rest of the way.
There was a really great WBF by Rand a few weeks about co-citations. I happen to agree with this. One of my sites ranks #3 in Google for a keyword that isn't even on the page.

What is your target keyword phrase for the home page. Keep your focus on that phrase. The first option is certainly spammy, but I can't figure out your prized keyword target from your second paragraph. What is in your H1 and title tags?

I understand it's been asked before, however moz staff is telling me keyword's capitalization is treated as a separate keyword.
So there I was looking through my rankings like every other day, when I see a lowercase and uppercase version of a keyword. Most times I see this, I see them with the same rankings, and even researched this about 5 months ago, when I came to the conclusion that google treats them the same way. However, this day I saw them as different ranks, same keyword, only capitalized 1st letter of the 2 word keyword. I asked moz staff about this, as I felt it was an error. But was met with the answer that google does indeed treat these keywords differently. My line of thought was that the rank checker didn't check both the lowercase and uppercase keyword at the same time, and SERPs happened to change when the second word was checked for rank, returning a different rank. So now, I am in doubt again, as to uppercase and lowercase keywords being different or the same in google's eyes? I honestly don't know why a uppercase keyword would have different motive from searcher than a lowercase when many time not, searchers can't even spell the keyword correctly.

Keyword Ranking
I would like to understand how to search for all instances where Johansens is on the 1st page of Google (US/UK) for any keywords that have Portugal, Lisbon or Algarve in them i.e. "luxury hotels portugal". Is there an easy/automated way to do such a search? Many thanks for your support, Doug

How do I find out what low-volume keywords are best to target?
Since many of our products and services are purpose-built for a niche community, I find that many of the keywords I am researching are all low-volume. Data on the Keyword Difficulty Tool show '0' under Bing Search Volume (exact match). I know what my competitors are targeting based on their title tags and web content, but I'm not sure if they did their keyword research homework, so I don't want to assume. Is there any other way to determine which keywords I should be targeting?

How to choose a Keyword
I searched around for this answer first but got information overload. I write a photography blog and tonight I will put up a post of photography from around Jiyugaoka Train Station. I will probably call the post Around Jiyugaoka Station or Around Jiyugaoka or something like that. I like in Jiyugaoka (a part of Tokyo) so I have other posts that I have keyworded for Jiyugaoka. What is the best way to determine what is the best derivative of 'Jiyugaoka Station' to choose for the best traffic? I assume I could enter them in to manually into the Keyword Analysis but is there is easier way that would give recommendations?

How do I use two keywords?
Hello! I am ranking very well with a keyword. But that same keyword without an S at the end (making it singural) gets quite a few more searches per month according to Google's Keyword Tool. However, dropping the S just doesn't sound quite right or make as much sense. So how can I target both keywords? Thanks in advance!

Word Stuffing & Key Word Density
I have read many articles about keyword stuffing and density. What precentage of your webpage should the keyword density be as I am a bit concenred that I will get a warning from google about keyword stuffing. Lets say I have a website selling books, it is only natural for the keyword book to show up as a high precentage. All advice appreciated.
