URL Migration: Better to have .301s processed or 200s?

I'm migrating sub-domains to sub-folders, but this question is likely applicable for most URL migrations.
For example: subdomain1.example.com to example.com/subdomain1 and any child pages.
Bear with me as it may just be me but I'm having trouble understanding whether internal links (menu, contextual etc and potentially the sitemaps) should be kept as the pre-migration URL (with .301 in place to the new URL) to give Google a chance to process the redirects or if they should be updated straight away to the new URL to provide a 200 response as so many guides suggest.
The reason I ask is unless Google specifically visits the old URL from their index (and therefore processes the .301), it's likely to be found by following internal links on the website or similar which if they're updated to reflect the new URL will return a 200. I would imagine that this would be treated as a new page, which is concerning as it would have a canonical pointing toward itself and the same content as the pre-migrated URL.
Is this a problem? Do we need to allow proper processing of redirects for migrations or is Google smarter than this and can work it out if they visit the old URL at a later date and put two and two together? What happens in-between? I haven't seen any migration guides suggest leaving .301s in place but to amend links to 200 as soon as possible in all instances.
One thought is I guess there's also the Fetch as Google tool within Search Console which could be used with the old URLs - could this be relied on?
Apologies if this topic has been covered before but it's quite difficult to search for without returning generic topics around .301 redirects.

Great question! In our experience, if you're migrating, the best choice is to put 301 temporary redirects in place until Google has the chance to index your new pages.
Be sure to submit all of your new pages to Google Search Console for indexing once migration is complete: https://www.google.com/webmasters/tools/submit-url

Technical Site Migration
Hello All- I have been in the SEO industry for about 4 years and feel fairly confident in my technical SEO; however, I am being asked to conduct a migration that is both a platform change (step 1) then a consolidation change (think of combining websites when a company is acquired) all within a 4-5 month time span. Does google ignore ? in url?
Hi Guys, Have a site which ends ?v=6cc98ba2045f for all its URLs. Example: https://domain.com/products/cashmere/robes/?v=6cc98ba2045f Just wondering does Google ignore what is after the ?. Also any ideas what that is? Cheers.

Does the url in for your homepage impact SEO
Is there any harm to SEO having a homepage url that is not clean like www.domain.com. For example citi uses https://online.citi.com/US/login.do Does that matter in any way? Would a company like citi benefit from changing to www.citi.com as their homepage?

URL Structure For E-commerce Sites
Hi Guys, I was wondering what would be the optimal and best URL structure for sub-categories on a E-commerce site for SEO purposes. Example if my category was dresses and I had multiple sub-categories within dresses would 1 or 2 below be the better URL structure? 1) Domain + Category + Sub-Category be the most suitable URL structure: Sleeveless Dresses URL: clothingstore.com/dresses/sleeveless-dresses Midi Dresses URL: clothingstore.com/dresses/midi-dresses 2) OR would excluding the category be better Domain + Sub-Category like: Sleeveless Dresses URL: clothingstore.com/sleeveless-dresses Midi Dresses URL: clothingstore.com/midi-dresses Do you think it makes much of a difference, is shorter better and more effective in this case? E.g. Rand discuses in this article: https://mza.bundledseo.com/blog/15-seo-best-practices-for-structuring-urls that having the keyword in the URL serves as anchor text, so wouldn't having additional keywords dilute value in this case? Massive URL Migration with thousands of 301
Hey Everyone! I'm currently working on a project that we have A Lot of product pages and we have thousands of URL's that need to be 301'd over. I know this can be a major issue and could lead to tons of errors. What is everyone's thought of doing such a huge Migration, Should I do it all in phases? or should I do them all at once so they can all be indexed together? What would you suggest to be the best way to go about doing such a massive migration?

How to fix issues regarding URL parameters?

Effect of URL change on Website
Hello we are developers and we have just created a new webpage for a client of us. The problem is that we can not replace the old one by the new one, cause our client has developed over 15 satellite pages that calls directly to the code of the old page. If we completly remove the old page we will make those 15 pages go down. Those pages are working over domains specially register for SEO reasons. For example Main page is www.euroair.es Satellite page is www.aireacondicionadodaikin.com Satellite page has pretty good ranking for search term "aire acondicionado daikin" As I told you, we have a new page but we can not make the page work over root domain. So we thought we could make it work over www.euroair.es/es, and make a redirection 301 of homepage and another important inner pages. We chose "/es" folder because it seems like a language folder, but we are not very sure of the effects of pages working on that folder instead of working on root directory. What do you think? Is this matter important or doesn't? Thanks

Redirecting my new Website URL to my old Website URL
Hi! OK, I am semi - new to SEO Moz but have been self-teaching for 3 years. However I am stuck.. I have been operating my e-commerce site from www.shopadornonline.com for the past 3 years. I just purchased www.shopadorn.com Right now Shopadorn.com re-directs to www.shopadornonline.com because all my products and links go to shopadornonline.com/productblahblahblah I guess I am stuck. Not sure what to tell my web designer to do? Do I give up on having shopadorn.com OR do I start re-directing customers and doing 301 re-directs? I think from what i have read that it is bad to have traffic going to both shopadorn and shopadornonline as they compete for rankings? Where should I start?
